Offshore oil extraction?

I have an interview tomorrow and they are going to ask me about the oil and gas industry. A brief overview of the extraction process of crude oil, and other process's involved (namely on offshore locations) would be greatly appreciated.

The job is for an apprentice mechanical techinician.

The fluids generally flow from the reservoir using only reservoir pressure, individual wells are controlled by chokes. The fluids then flow to separation, either 2-phase (gas/liquids) or 3-phase (gas/liquid hydrocarbons/water), and in one or more steps (High pressure %26gt; medium pressure %26gt; low pressure).

The gas can then be conditioned by various means, compressed, and exported either as a gas or as LNG, depending on the requirements, hydrocarbon liquids are exported by pumping down a pipeline, or by tanker. Water is generally cleaned up to %26lt;40mg/kg residual hydrocarbon, and dumped to sea.

Sorry I can't be more specific, but it's a big subject, and can't really be covered in a couple of paragraphs - my last technical interview took a couple of hours, and that was carried out by guys who knew me and were fully aware I already knew the basic stuff.
